do you know the (english) muffin man?


In my kitchen, as far as certain edible fare is concerned, some truism's hold, well, true. There are some things I am willing to spend my time on, while others are best left to be made by someone else, [I'm talking about you puff pastry], so while this may be completely objective and open to debate, there are certain lid-dropping foods just not worth making myself.  At times, I have found myself shying away from a recipe because it's complicated technique, expensive ingredients or la-dee-da equipment does not blow my hair back. Just to get you started down  easy-breezy lane let me throw out a few...I won't grind my own meat (uck), stuff sausage casings (double uck), and let's not even talk about the one time I tried to flambĂ© something that left me laughing and crying at the same time [I'm not talking about the "I'm so happy, I could cry" feeling you get when your first child is born], it was a disaster, because clearly when fires occur in the kitchen, it is the recipes fault. Just kidding. Or not.

And let me just say, there have been recipes that I once deemed too frou-frou, fussy, or time consuming that have waited patiently for me to give them a chance, only to find their way into my recipe repertoire and become favorites. Seems I can't live without homemade crackers, making sushi, homemade jam, and French macarons are now le favorites. Oh my (I know).
But English muffins? Really? Yes, I know, hard to imagine aren't English muffins just something to plop poached eggs on? The edible equivalent of a comfy chair? They satisfactorily fulfill their culinary function by sopping up what would otherwise become a gooey mess, but that's about it. Right? Wrong!

Turns out, English muffins are worth it. This recipe is super simple. The dough is easy to work with and comes together beautifully. Some of mine came out a little wobbly, they seem the badge of domestic ingenuity, and I kinda like that, and dude! they were delicious {look out Thomas}.
 


I like that these muffins are cooked on a griddle and not baked in the oven. It was fun making them and they smelled amazing [like thick pancakes]! If you want perfectly round muffins [hell-o OCD] you will need round metal rings, I actually found some English Muffin Rings at my local cooking store which made it super easy. If things like that don't bother you, you can just drop the dough on the hot griddle and let it do it's thing, it won't go far, it's pretty well behaved.
