oooo la la! pithivier


When I want a simple, very elegant desert here is my go-to recipe. Pithivier (pee-tee-VYAY) is a gorgeous, classic, French cake composed of frangipane (almond cream) encased between two puff pastry la la!  This puffed up beauty practically makes itself, using store-bought puff pastry and a few whirls of the food processor it comes together in a snap! Pithivier can be made in advance and frozen until ready to bake, but be warned, when it does bake it puffs up like a drama queen, to about 8 times it's height and the aroma is nothing short of traffic stopping.
