Peaches have an intoxicating aroma, they smell like sunshine, summertime & childhood. Oh & I love the color...kind of orange & creamy yellow with a rosy blush all mixed together on a velvety soft skin with an almost to-good-to-be-true-flavor. I can remember steamy summer afternoons sitting on the porch in my flowered "bikini" eating a peach. So sweet & juicy the first bite sends juice running down my chin & onto my arms & legs. I eat it as slow (& messy) as I can, always taking care to bury the pit so that we will have peaches next year. Then I run with delight through the sprinkler!
Peaches can be disappointing, but if you get a good one it is pure magic.
Last Saturday I went to the Farmers Market & found the most amazing peaches! I ate one right away...... yum!!! then went home & made the most delicious individual peach crisps & served them with home made vanilla ice cream...wow! This was definitely one of the best things I have eaten in a long time!

I love to serve these with homemade vanilla ice cream!
filling:
4 cups ripe peaches, blanched & sliced (about 8 peaches)
2 tablespoons white sugar
2 tablespoons cornstarch
topping:
1 1/2 cups flour
1 cup sugar
1/2 cup firmly packed brown sugar
3/4 cup butter cut into pieces & softened
Preheat the oven to 375*.
Make the topping by mixing together the flour & sugars in a large bowl. Using a pastry blender cut in the butter until the mixture resembles coarse crumbs.
Place the peach slices in a large bowl & toss gently with the sugar & cornstarch, making sure that the fruit is evenly coated.
Spoon the peaches into six 8 ounce custard cups. Sprinkle the topping over the fruit. Place the cups on a baking sheet.
