blueberry cake!

Beautiful!!!

I love recipes that are simple, delicious & come out perfect every time......this is one of those recipes. The batter is thick & creamy with just enough flavor to compliment the fruit yet not distract from it. I use this recipe all year long because no matter what fruit you use it is delicious!!! I have made this beautiful little cake with apricots, cherries, plums, apples, blueberries, raspberries, blackberries, a combination of berries that I needed to use up...well, you get the picture, use what you like.

Here is the recipe......
blueberry cake
3/4 cup sugar
1/2 cup butter at room temperature
1 cup unbleached flour
1 teaspoon baking powder
1/8 teaspoon salt
2 eggs, room temperature
2 cups blueberries (or fruit of your choice)
3 tablespoons sugar mixed with 1 or 2 teaspoons ground cinnamon
fresh whipped cream or homemade ice cream for serving (also delicious without)

Preheat your oven to 350*. Butter & flour your pan, I use a springform pan but a tart pan or even just a cake pan is fine.


In a bowl at medium speed beat the butter & sugar until light & fluffy.

In another bowl whisk together the flour, baking powder & salt. Reduce speed to low & gently beat in the flour mixture. Beat in the eggs, one at a time. Increase speed to medium & beat for 1 minute.



Spoon the batter into your prepared pan.
Arrange blueberries on top & sprinkle with the cinnamon/sugar mixture.



Bake for 40 to 45 minutes, until a toothpick inserted into the center comes out clean. Using certain fruits such as plums will increase the baking time so be flexible!

Serve warm or at room temperature with whipped cream, home made ice cream or plain!!!
